Producer Story

High in the Sierra de los Cuchumatanes, the tallest mountain range in Central America, CODECH brings together coffee-growing communities across Guatemala’s renowned Huehuetenango region. The organization is composed of three base cooperatives, including ADIPY, the cooperative behind this lot, and represents producers from the Popti, Mam, and Q’anjob’al branches of the Mayan community.

Since beginning its partnership with importer Atlas, CODECH has steadily expanded its focus on quality and traceability. A microlot program introduced in 2009 began by grouping producers according to farm elevation, followed by the cooperative’s first internal cupping competition in 2012. That competition has since become an annual tradition, helping identify exceptional coffees and creating opportunities for individual producers and smaller groups to have their work recognized.

The Process

This washed coffee brings together Caturra, Bourbon, Catuai, and Pache varieties grown between 1,000 and 2,000 meters above sea level. The dramatic elevation range and mountainous terrain of Huehuetenango provide diverse growing conditions across the farms contributing to CODECH.

Through continued collaboration with Atlas, CODECH has developed stronger systems for quality control, lot separation, and farm-level traceability. What once consisted primarily of larger cooperative lots has evolved to include smaller, more differentiated offerings, allowing exceptional coffees to remain distinct while creating greater opportunities for the producers behind them.

The Cup

This coffee offers a warm, balanced expression of Huehuetenango, beginning with the comforting sweetness and spice of gingerbread before opening into lively citrus and ripe fruit. A lemon twist brings gentle brightness, while stone fruit adds a soft, rounded sweetness and depth.

The result is a cup that feels both familiar and refined, pairing the rich sweetness associated with classic Huehuetenango coffees with an elegant fruit character and a bright, balanced finish.
