This Chelbesa Washed lot is a distinguished coffee produced at the Chelbesa One Washing Station, located in the Gedeb Zone of Ethiopia. This facility, managed by SNAP Specialty Coffee, serves approximately 1,000 local farmers who cultivate coffee on small parcels of land ranging from 2 to 3 hectares each. These farms are situated at elevations between 1950 and 2200 MASL, providing ideal conditions for coffee cultivation. The lot comprises two Ethiopian heirloom varieties: Korume and Wolisho.
The production process at the Chelbesa One Washing Station adheres to rigorous quality standards. Upon arrival, the coffee cherries undergo an initial sorting process in water, during which any inferior cherries that float are removed. Subsequently, the selected cherries are de-pulped and subjected to a controlled fermentation process in tanks for a period of 48 to 72 hours. Following fermentation, the beans are thoroughly washed and transferred to raised beds for drying.
To ensure optimal and uniform drying, the parchment-covered beans are meticulously rotated on a daily basis. This drying phase typically extends from seven to ten days, contingent upon prevailing weather conditions. The process concludes when the beans achieve the precise moisture content required for optimal flavor development and storage stability.
We’re tasting lots of exciting floral notes in this coffee; bergamot, rose, and lime all shine through deliciously. While this coffee will work great in all brewing methods, we think you’ll have a lot of fun experimenting with this coffee in a pourover or Aeropress application. Try a slightly coarser grind and increase brew agitation to really let this coffee sing!
