Grown at 1500 masl, this blend of Castillo, Cenicafé, and Colombia varieties undergoes a meticulous Natural Anaerobic process. The cherries are fermented for five days in sealed barrels, building a complex flavor profile. The final step is a controlled drying process in silos for 72 hours at 40°C, a technique that locks in the coffee's rich, sweet, and intense notes.
