Based in the San Carlos village of Urrao, Nelson has spent years perfecting his craft, making continuous supply of his exceptional lots a rare and coveted find.

For over six years, Nelson has been perfecting his cultivation of the unique Chiroso variety, developing a truly distinctive profile featuring intensely floral notes that captivate coffee enthusiasts globally. His dedication to this rare variety has produced exceptional results, with his coffees gaining recognition among discerning palates worldwide. This limited lot from Granito de Oro represents the very best of Nelson's exceptional farm.

The Process

This extraordinary coffee undergoes a meticulous 8-day anaerobic washed process that showcases Nelson's commitment to innovation and quality:

Days 1-7: Only the ripest cherries are hand-selected by women in the selection area, followed by float testing to separate premium fruit. The cherries are depulped and placed in plastic tanks, submerged underwater to prevent temperature fluctuations and early demucilaging. Fresh water is added daily to maintain optimal fermentation conditions.

Day 8: The coffee is thoroughly washed and drained from the fermentation tanks.

Drying: The coffee is moved to African-style beds inside a tented area, where it's carefully dried for 10-15 days until reaching the optimal moisture content of 10.5-11.5%.
