Ferney Plazas operates his farm in Acevedo, located in the southern region of Huila, Colombia, at an elevation of 1,500 meters above sea level. This coffee represents a careful blend of three varieties—Castillo, Cenicafé, and Colombia—each contributing to the complexity of the final cup.
The processing method employed by Ferney is a meticulous Natural Anaerobic process that sets this coffee apart. After harvesting, the coffee cherries are placed in sealed barrels where they undergo a five-day anaerobic fermentation. This oxygen-deprived environment allows specific microorganisms to thrive, building layers of complexity and intensity in the flavor profile.
Following fermentation, the cherries enter a precisely controlled drying phase. Rather than traditional sun-drying on patios, this coffee is dried in silos for 72 hours at a consistent temperature of 40°C. This technique locks in the coffee's rich, sweet, and intense characteristics while ensuring even moisture removal throughout the beans.
The result is a vibrant and fruit-forward cup with bright notes of grapeade and wild strawberry, complemented by floral hibiscus undertones. This natural anaerobic processing method amplifies the inherent sweetness of the coffee cherries while creating a clean, complex cup that showcases the unique terroir of Southern Huila.
