Producer Story
Finca El Espejo sits high in the mountains of Santa María, Huila, where second-generation producer Reinel Borbon tends four hectares of steep, verdant land at 1,850 meters above sea level. After years of cultivating lentils and grains, Reinel shifted fully into coffee, a decision that has shaped more than 15 years of dedication and growth.
Today, the farm maintains around 13,000 trees of Pink Bourbon, Caturra, and Colombia varieties. Reinel works closely with his family, and his eldest son has begun learning the methods and “secret recipe” that define their signature lots.
The Process
Each lot begins with selective handpicking of the ripest cherries, followed by an initial 20-hour dry fermentation in cherry. After depulping, the coffees diverge into two distinct pathways. The parchment ferments in open barrels for up to 80 hours alongside Reinel’s own yeast substrate before being washed and dried. The lot is finished slowly on raised beds for 14–18 days, depending on climate conditions. These carefully controlled fermentations highlight each variety’s character while maintaining clarity and balance.
The Cup
Expect a cup that reflects the precision and intention behind Reinel’s processing: structured sweetness, layered acidity, and clear varietal expression. The Pink Bourbon offers a bright, refined profile, while the yeast-inoculated Caturra/Colombia lot brings deeper aromatic complexity and a more expressive fermentation character. Together, they represent the innovation and craftsmanship emerging from Santa María.
