Brazil - Sao Silvestre

from 5.00

Located in the north of Minas Gerais, in an area known as the Cerrado Mineiro on the border with Bahia state, Fazenda São Silvestre has been farmed by the Andrade Brothers (Ismael & Eduardo) since 1991. The brothers have a BSCA (Brazil Specialty Coffee Association) certified cupping lab at the farm, which helps them to maintain strict high quality standards from both a physical (harvesting/processing) and sensory (taste/smell) standpoint.

As is common in Brazil, this coffee has undergone a pulped natural processing method, where the beans are allowed to dry with the mucilage intact. Pulped natural processing produces a classically delicious Brazilian flavor profile in this lot : sweet peanut butter, raspberry, and pear. With a mellow and soft acidity, this coffee is a perfect morning cup and stands up well in higher extraction environments like espresso.
