Among these is the Maragogype, transplanted from his family's original farm, which was lost during the Nicaraguan Revolution.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eLast year, we had the privilege of offering coffee from these trees, processed using the traditional washed method. The coffee's exceptional flavor profile and potential prompted us to suggest that Bayardo experiment with natural processing methods. Drawing on his experience with anaerobic processing techniques developed over recent years for his larger natural lots, Bayardo applied his expertise to a small-scale experiment with 60 pounds of Maragogype fruit.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eThe results were remarkable. The natural process beautifully complemented the variety's inherent tropical and bright fruit characteristics. The flavor profile is characterized by intense notes of watermelon, floral, lemongrass, and red apple.
