We're proud to offer these limited releases a few times each year, and we hope that your experience brewing this coffee at home is as expressive as these coffees have been on our cupping table here at the roastery. Colombia - Santa Librada
Nestled in the lush hills of Santa MarĂa, Huila, Colombia, Finca Santa Librada stands as a testament to coffee excellence. At 1900 MASL, this 39-hectare farm boasts 12 hectares of meticulously tended coffee trees. Edwin Carvajal, a passionate second-generation grower, oversees 30,000 trees producing prized varieties like this spectacular Pink Bourbon. The farm's meticulous process involves handpicking ripe cherries, followed by a unique 5-day sealed barrel fermentation and 15-20 day drying on raised beds.
Through our evaluation of this coffee, we experienced aromatic notes of effervescent ginger soda and raspberry. Our tasting notes were equally as impressive, with pineapple, thyme, orange, and jasmine all shining through in the cup.

Ratio: 1:15
Grind: Medium Fine (a tiny bit finer than your typical pourover)
Brewer: V60
- Start with 15g of coffee and 255g of water at 205F.
- Bloom with 35g of water for 10 seconds, then swirl.
- 30 seconds after bloom, pour to 225g in one continuous circular motion.
- Water should finish passing through by around 2:40.
